How TO MADE Six inches of tea mousse
Steps 1 to 4
1. Milk and 20 g of sugar are heated until small bubbles emerge, and tea powder is added after sifting, stirring evenly, tea powder is easy to clump, must be stirred evenly.
2. Four egg yolks plus the remaining sugar are sent to the color white.
3. The freshly squeezed milk is slowly poured into the cooked egg yolk, stirring continuously with a manual egg beater to prevent the egg yolk from boiling.
4. The tea egg paste is poured back into the pot, heated to a boil, stirred continuously, and finally thickened.
5. After separation from the fire, add 10 g of gelatin powder prepared with 30 g of water, if necessary with gelatin slices, soften in advance with ice water bubbles, stir evenly.
6. Add yogurt and stir evenly.
7. The eggs are cooked in a mousse paste and cooled in ice water.
8. While cooling, prepare the cake slices, cut the pre-baked chocolate cake into two slices, then cut a circle of about half a centimeter along the edge, and put the spare on one side.
9. Light cream is distributed to six distributors, i.e. it is relatively rare to have a pattern.
10. Take out the cooled egg milk mousse paste, check if it is thick, make sure it is thick and then proceed to the next step.
11. Light cream and egg yolk are mixed evenly twice.
12. Take a six-inch round shape, put the bottom into a cake slice, pour half of the mousse paste, then put it into another cake slice, press with your hand, finally pour the remaining mousse paste, flatten the surface, gently shake a few times, put in the refrigerator and refrigerate for more than 4 hours.
13. After removing it, you can blow around the mold with a blower, and if you want to look good, you can filter a layer of matcha powder on the surface.
14. This is what it looks like inside.
15. I don't have any experience cutting cake, so the hierarchy doesn't look good.
