Cocoa and macaroni

How TO MADE Cocoa and macaroni
Steps 1 to 4
1. Almond flour, sugar flour and cocoa powder mixed and then sifted (actually I didn't have the patience = = half of the basic sifting is not sifted)
2. Add 18 G of egg yolk to the dough, and the dough will be dry (the egg yolk is separated a few days in advance and refrigerated or frozen for backup)
3. Another 18 g of egg whites plus 8 g of white sugar to raise a small, upright pointed corner (sometimes I just hit a soft hook and it's okay).
4. 40 G white sugar plus 12 G water mixed
Steps 5 to 8
5. I don't have a thermometer, so I guess I'll just boil it and turn it off.
6. This little bit of syrup is cooked quickly (so the egg whites are prepared first), and the cooked syrup becomes transparent.
7. I've heard that it's better to add the syrup in batches, maybe because I don't make a lot of it, but it's okay to add it one at a time.
8. Add step 7 protein sugar cream to step 2 dough and mix slowly and evenly
Steps 9 to 12
9. 7 pieces of about 6 cm in diameter are squeezed into the flower band, squeezed on the silicone mat (diameter about 3 cm) and left on the oil cloth.
10. After drying until the surface is untouched (in my home climate it takes at least 40 minutes), put it in a preheated oven at 140 degrees Celsius and put it on the middle layer for about 15 minutes.

12. Stuffing: These larger macaroons are made from homemade cheese squeezed onto oilcloths, with the edges of the skirts more suited to the eyes, without added sugar, with acidity just right, but without smooth stirring, they are used roughly.

13. These smaller macarons are made with silicone pads, and the inside of the skirt is filled with tiramisu dough, but the dough is more liquid, so there's not a lot of dough.
