Coffee and Italian crackers
In the past, I've published a product called BISC0TTI, which is a hard-boiled Italian cracker that doesn't contain any fat in its ingredients.Today's biscuits are its cousins, but, because of the addition of butter, they taste very different and are very spicy.Although the characteristics of BISCOTTI have been lost, the method of preparation is different, but the appearance and the method of baking are the same, both are crescent-shaped cookies, and both require two rounds of baking.If you're not used to hard BISCOTTI, you might want to try it.

Steps 1 to 4
1. (Preparation: dissolve 2 packs of instant coffee powder in 1 teaspoon of hot water, cool to make coffee liquid) After softening the butter, add fine sugar, use an egg beater to make the volume slightly larger and the color slightly whiter.
2. Add 1 egg yolk, stir evenly in the egg mixer, add the whole egg juice two to three times, and continue stirring evenly in the egg mixer.
3. After stirring, the butter paste is thick and smooth, and the oil is not separated from the water.
4. Pour the coffee juice into the stirred butter.
Steps 5 to 8
5. Stir evenly with an egg mixer.
6. Mix low-fat flour and baking powder through a sieve, pour into the butter paste, and then pour the almonds into the butter paste.
7. Mix the flour and butter into a dough by hand.
8. The dough is being kneaded to form the long stripes shown in the picture.
Steps 9 to 12
9. Place the long-bar dough in a preheated oven, heat it up to 160 degrees, bake it for about 35 minutes, remove it and cool it slightly.
10. Slightly cooled dough, cut into thin slices about 1 cm thick.
11. Arrange the slices on the baking tray, preheat the oven to 135 degrees, and continue baking for about 30 minutes until the moisture in the baked biscuits dries.

Handy cooking tips
1 ⁇ BISCOTTI needs to be baked twice, first for shaping and second for baking the moisture in the dry biscuits.2 tablespoons of first baked dough, which needs to cool slightly before it can be sliced, otherwise it will disperse when sliced.Three cups of spicy coffee and a cup of strong coffee are a great afternoon tea companion.
