3. Production of Polish yeast: whole wheat flour (191 grams and yeast 0.8 grams) mixed with water (176 ml), fermented at room temperature to twice the size, as shown here there are many bubbles produced but not yet collapsed to ferment! Because the yeast content is small, the fermentation time takes 2-4 hours, in fact the recent weather in Shanghai is not yet warm, I probably fermented at room temperature for eight hours to double the size, but low temperature fermentation will awaken more flavor in the grain for a long time!
4. Then the main dough is mixed, and then the emulsion and the Polish dough are added to make the dough, although there is no butter, I added a little honey, and the whole grain also produces a diaphragm, which is very rare, which is the benefit of using both yeast heads at the same time!
