  The recipe for this bread comes from the ancestors of love and freedom.A combination of cranberries, chocolate, and cocoa powder, complementing and intersecting various flavors.Since there is no toasted chocolate at home, I used ordinary chocolate.When eaten hot, chocolate also has the effect of popcorn! As the ancients said: "There is acidity, there is sweetness, and there is a slight bitterness and bitterness, it really tastes like love". Thank you for sharing love and freedom.

WHAT YOU NEED

Ingredients

200 grams of high-quality flour
25 grams of low-fat flour
25 grams of rye flour
13 grams of cocoa powder
25 grams of sugared orange pudding
38 grams of chocolate beans
Dried cranberries 50 grams
15 grams of fine sugar
4 grams of salt
195 grams of water
15 grams of unsalted butter
2.5 grams of instant yeast

How TO MADE Cranberry chocolate soft wrap

Steps 1 to 4

1. Dry the cranberries in advance with a water bubble and use kitchen paper to dry the surface moisture before use;

2. The raw materials, other than the dried nuts of the butter, are mixed together until they are smooth, and the butter is mixed until the expansion stage, i.e. a thicker film can be pulled out;

3. The dough is placed in a container and then basic fermentation is carried out in a warm place;

4. For about 30 to 40 minutes (at a higher room temperature, be careful not to overheat), the dough is fermented to twice its original size.

Steps 5 to 8

5. The finger dries the powder, the hole does not shrink or collapse, and the basic fermentation ends;

6. Remove the dough, exhale a little, and add the sugared orange peel, the toasted chocolate beans, and the dried cranberries.

7. Mix the dried fruit with the dough by folding;

8. The dough is divided into two equal-sized pieces, rolled round and then the preservative film is loosened for 15 minutes.

Steps 9 to 12

9. Gently beat the loose dough into a growth square;

10. Fold inwards from the top and bottom one-third, then fold the dough in pairs, press the seal with the palm of your hand, and let the lid loosen for 15 minutes;

11. After loosening the dough, draw the growth square again;

12. Fold inwards one-third of the way from top to bottom, then fold the dough and squeeze the ends;

Steps 13 to 16

13. The dough is sliced down and placed on a griddle for final fermentation in a warm place;

14. After about 40 minutes, the dough is fermented to 1.5 times its original size.

15. A moderate amount of rye flour is sifted over the dough and cut with a razor;

16. Preheat the oven to 210 degrees.

17. After preheating, the dough is placed in the oven, 200 degrees, middle and lower layers, up and down the fire, for 25 minutes.

18. Immediately after baking, remove from the oven and transfer to the baking net for cooling.

Handy cooking tips

  1. If you want a better and stronger flavor, you can use rum to soak dried cranberries.Similarly, before use, use kitchen paper to dry the surface moisture; 2.My operation process is slightly different from that of my predecessors in Love and Freedom, and when we do it, we can also mix the dried fruit into the dough first and then ferment it; 3. the specific baking and fermentation time should be adjusted according to the actual situation.It's hot now, so you can use cold water or ice water to knead the dough, but be careful not to overdo it; 4. After baking, remove from the oven immediately and transfer to a drying net to cool, so as not to create steam at the bottom of the bread.
