01 Bavarian water bread
It's an alkaline water bread from Bavaria, some call it breadcrumbs, some call it twisted bread, it's the old man's beer bread, the perfect combination of beer.

Steps 1 to 4
1. First, the flour, the yeast, the starch, the water, the milk powder are mixed into the dough, then the butter and the salt are mixed evenly, and the dough is repeatedly beaten until the yeast is kneaded.
2. Wake up: place the dough in a warm place (e.g. on a heater) for 40 minutes;
3. Divide: slice the dough to 70 g/piece and continue stirring for 30 minutes;
4. Shaping: After many rolls of dough, the dough is rubbed into long, thin stripes with two thick heads in the middle, and then into a twisted shape, which can also be made into a circle or any other shape;

5. Freeze: place in the freezer until the epidermis freezes hard;
6. Baking soda: Melt baking soda in warm water, soak the frozen dough in baking soda for 30 seconds, remove it and put it in the baking tray, then sprinkle it with salt grains as a decoration and flavoring;
7. Baking: Preheat the oven to 210°C and bake for 25 minutes.

TIPS: 1.Make the dough as slowly as possible, the low temperature makes the dough taste better; 2.Baking soda in contact with water can burn the skin, it is recommended to wear rubber gloves when making it.
