  Some time ago, I bought ten kilos of Shanxi dates online, one is not big, but it's very sweet, and it's not that kind of dry baba, because I was afraid that the dates would be bad for a long time, so I tried to make some dates, I didn't think the dates would be good.And without adding sugar, it's already sweet, so it's nice to have some dates for breakfast.I haven't made bread for a while, but yesterday I played with dough at home, made a plate of dates, and it worked very well!

30 grams of milk powder
400 grams of high-quality flour
45 g of white sugar
2 grams of salt
5 grams of yeast
10 g of olive oil

1. Put the raw milk, the eggs, the milk powder, the high-strength flour, the white sugar, the salt, the yeast in turn into the bread maker's barrel, and start the quick kneading process; my machine is a kneading process of 20 minutes, after which the dough can be pulled out into thick pieces, tear the dough into small pieces, add olive oil, and start a quick kneading process (olive oil can be replaced with butter, I didn't have to soften the butter, so I used olive oil);

2. The good dough is doubled in the baking machine;

3. The fermented dough is mixed and divided into nine small doughs of the same size, each about 87 g, covered with a preservative film and left for 15 to 20 minutes (depending on the room temperature)

5. The method of preparation: the red date is washed and cooked in a saucepan with a moderate amount of water, the red date is raised, the core is removed after stirring, the date peel is filtered with a sieve, the filtered date paste is put in a frying pan to fry the excess water, reaching the desired density, it can be used after cooling off the fire;

6. After settling, the dough is aerated, stirred with a doughnut stick, and wrapped in a date paste filling.

7. After wrapping, close the door.

8. When it's all wrapped up, it's put in the oven for a second fermentation. (I used a nine-inch square mold)

Steps 9 to 12

9. The second fermentation can use the fermentation function of the oven, or you can put a plate of boiling water in the lower layer, close the oven door, and ferment for about 30-50 minutes to double the size;

10. Oven up and down, middle and bottom, 170 degrees for 25 minutes;

11. After cooking, brush on a layer of honey water, the surface can be bright, but some sticky hands;

12. It's very good to take it out of the mold because it doesn't stain.

Steps 13 to 16

13. If you don't use mold, you can apply a layer of butter or olive oil first, which is also better for removing mold.

14. In the past, I used to make bread by brushing the whole egg before baking after the second fermentation, but this time I tried to brush the honey water after baking, which is also very good, sweet on the surface, although a little sticky, but can be ignored;

15. If you can eat it in three days, you can keep it at room temperature, if you can't eat it, you can freeze it, take it out before you eat it.

16. The sweet date paste is very real, and there are no additives, only the sweetness of the date itself, the taste is very good, if there is no date paste, you can also replace it with soy sauce paste or purple potato paste, or other your favorite filling, you can make a good breakfast bread.

  Note: The liquid content of the bread is relatively large, although the recipe is ready-made, but because the flour used by each person is different, the water absorption is different, so the same recipe will increase and decrease the liquid in different flour uses, it is recommended to reserve about 10 g of liquid first, mix the other materials into the dough and then add the reserved liquid according to the situation; the temperature and time of the oven are the same, the temperature and time of each oven will be different, the temperature and time I listed here is only shown on my oven, as for other ovens, you need to adjust it yourself.
