Steps 1 to 4
1. The butter is softened at room temperature, the other ingredients are kneaded into a smooth dough, then butter is added, kneaded until the butter is absorbed.
2. Put in the oven, put a plate of boiling water at the bottom (no electricity), ferment for an hour
3. After an hour, about twice the size, knead for a while, expel the gas, and divide into six small doughs, each about 60 grams.
4. Cover with a preservative bag or film and let stand for 15 minutes.
5. The small dough is pressed flat, exhausted, and rubbed into thin long strips about 45 cm long, forming a flower shape (as shown in the picture, from Jun's).
6. Then a second fermentation is carried out (in 45 minutes the fermentation is doubled).
7. After the second fermentation, brush the egg juice, preheat the oven to 180 degrees.
