How TO MADE Mini-simplified stick
Steps 1 to 4
1. Mix the water and the yeast evenly so that the yeast dissolves completely.
2. Mix the high-quality flour and low-quality flour evenly over water, and add salt to the flour.
3. Do not let the salt come in direct contact with the yeast.
4. Mix with a scraper to the basic clump, then transfer to the scribing board and rub the surface.
Steps 5 to 8
5. Grind to the dough to the stretching stage, smooth surface.
6. Stretch the dough and fold it once in each direction, for a total of four folds.
7. It is placed in a container, covered with a preservative film, and moved to a warm place to ferment.
8. Fermented to 2.5 times its original size.
Steps 9 to 12

10. Divide the dough evenly into three parts.
11. Fold it into an approximate cylinder according to the method shown in the figure, and then rub it from the middle to the sides with your hand, rubbing it into thin lengths.

14. Continue fermenting at room temperature to twice the size and then sprinkle a little flour on the dough and cut a few slices with a small knife.
15. Put it in a preheated oven and bake it for 25 minutes at 190 degrees Fahrenheit. When baking, put a bowl of water at the bottom of the oven, so that the skin of the stick becomes crisp.
