WHAT YOU NEED

Ingredients

150 grams of high-quality flour
15 grams of butter
75 grams of water
Eggs (the rest can be used)

5 ml of yeast
1.25 ml of salt
A moderate amount of soy sauce

How TO MADE Tofu bread

1. You have to have an oven + a bread maker (no bread maker, from the dough to the fermentation, one day!)

2. Step 1: Put all the ingredients in the bread maker, except for the butter.

3. The order: water-egg-salt-soup-flour-yeast

4. Press the function button and knead for 20 minutes (do not cover the bread machine lid, otherwise the dough will harden) After 20 minutes, add butter to the dough kneading machine for the second time and the dough, and the dough will finish fermenting.

5. Note: If the hand and the dough are to be rubbed, the dough can be stretched into a thin film, which can be fermented, preferably during the day in a place with a higher room temperature, covered with a fresh film.

6. Can you see the fermentation? Touch it with your finger, press it on the surface of the fermentation, and if it doesn't deform, it means the fermentation is over.

7. Step two: After fermentation, divide the dough into six pieces in proportion, but some are bigger, you can actually divide it into eight pieces (remember: don't stir) and stay awake for 15 minutes and also let the air out of the fermentation.

8. Step 3: After 15 minutes, the dough is kneaded evenly, with no wrinkles on the surface.

9. Press flat, stretch (you can also use a doughnut stick) and put the soy sauce filling in the middle, and collect it.

10. Put it in the oven (on top of the oven tin paper) and put the remaining egg juice in the oven, and put the bowl of water underneath.

11. This is the second fermentation.

12. Step 4: After waiting for the volume to grow, start baking at 180 degrees for 12 minutes, out of the oven!
