WHAT YOU NEED

Ingredients

High starch flour ... 200 grams
Low-fat flour ... 50 grams
Whole egg juice ... 25 grams
Fine sugar ... 40 grams
Yeast ... three grams
135 grams of milk
25 grams of butter
Salt ... three grams

How TO MADE Cabbage bread

Steps 1 to 4

1. Have all the materials ready.

2. As with normal bread, all ingredients except butter are mixed, kneaded until the dough is firm, butter is added, and kneaded until the expansion stage (Figure 2).

3. The mixed dough is rolled and placed in a large bowl covered with a preservative film for the first basic fermentation.

4. The fermentation time is about 45 minutes, reaching 2-2.5 times the size.

Steps 5 to 8

5. Take out the fermented dough, squeeze the air out of the dough by hand, and divide it into eight equal parts.

6. Cover with a preservative film and let stand for 15 minutes.

7. Take out the solid dough, knead the dough into an oval, and put it on the coconut flour.

8. The dough is folded tightly on both sides and placed in the oven with the mouth facing down.

Steps 9 to 12

9. In the oven, put in a bowl of hot water, put the well-shaped dough in the oven, and do a final fermentation for 40 minutes.

10. Remove, brush over the whole egg juice, and gently trim the fermented dough with a knife (Figure 7).

11. Put in the middle layer of a preheated oven, heat up to 170 degrees, for about 12 minutes, and bake until golden yellow.

13. After softening the butter, add the coconut flour and stir evenly.
