There's always a bunch of people behind a cook who support him... a few of his friends are always eating honey bean bread, they're going to eat this, so what do you do? Prepare the ingredients, roll up your sleeves, and make the dough!
WHAT YOU NEED
Ingredients
550 grams of high starch flour55 grams of eggs367 grams of milk55 grams of sugar6.5 grams of salt6.5 grams of yeast55 grams of butter
How TO MADE Honey bean bread
Steps 1 to 4
1. Put all the ingredients except the butter and yeast in the bread maker (I use the ACA500), and the dough for 10 minutes, then turn off the bread maker.
2. Let stand for more than 30 minutes, put in the yeast, choose the sweet bread procedure, run for 10 minutes, add the butter softened at room temperature, and run the sweet bread procedure again.
3. (Because the dough is large, it is best to remove the dough for fermentation)
4. At the end of the dough process, the dough is removed and placed in a sufficiently large dough cover for the first basic fermentation.
Steps 5 to 8
5. Basic fermentation ends when the dough is 2 to 2.5 times larger.
6. (Please see tip if basic fermentation is complete)
7. Remove the dough gently and exhaust it.
8. Then divide it into 9 equal points, roll around and relax for 15 minutes.
9. Take a piece of dough into an oval shape, press it thinly on one side and then sprinkle a fair amount of red beans, then fold it along the long side, roll it from a thick head, squeeze it tightly.
10. Roll the remaining dough one by one and put it in the oven.
11. (Brush a little oil on the pan)
12. Put the pan in the oven, the middle layer, put a bowl of hot water at the bottom of the oven, turn on the oven's fermentation function, and do a second fermentation.
13. (Temperature and humidity required for second fermentation, see tip)
14. After the second fermentation, brush the milk on the bread.
15. Preheat in the oven, 180 degrees, bake for 20 minutes.
16. (Note: observe the color of the bread after 10 minutes, if it is already colored, you can put tin paper on the bread to avoid excessive coloring)
17. After the bread comes out of the oven, use the hot brush to add honey water to increase the flavor and brightness.
Handy cooking tips
The method of checking whether the basic fermentation of the dough has been completed: whether the volume has reached 2-2.5 times the size, whether the surface is smooth and delicate.Apply some dry flour with your index finger, then insert it into the center of the dough and pull out your finger. If the hole is stable and contracts slowly, it indicates that the fermentation is complete. If the cavity contracts rapidly, it indicates that the fermentation has not been completed and further fermentation is needed. If the surrounding bands collapse quickly after the cavity is extracted, this indicates excessive fermentation.Secondary fermentation is also known as secondary fermentation. The ideal temperature is around 30-35 degrees and the humidity is 75%.It takes about 30-45 minutes.
