It's a lovely crab shape, thick cream with butter, and you can taste it when you knead it.

WHAT YOU NEED

Ingredients

High starch flour 120 grams
Milk 50 grams (to be increased or decreased as appropriate depending on the water absorption of the flour)
One egg.
30 grams of butter
30 grams of sugar
A moderate amount of salt

How TO MADE Crab bread

Steps 1 to 4

1. All the ingredients except butter, sugar, salt, milk (be careful not to pour it all in at once) flour, dry yeast powder, put it in the bread bucket, start the dough process, form a smooth dough, soften the butter while kneading, remove the dough, pour the butter in, grind the dough into small pieces and mix the butter, then start the dough process

2. After the kneading process, enter the fermentation process for 90 minutes, on this day, more than 60 minutes, the dough has already doubled in size, if the weather is cold, the fermentation time is appropriately extended

3. Remove the fermented dough, peel it into small pieces, and restart the dough process twice for a total of 30 minutes (15 minutes each), at which point the dough is elastic enough to pull out a large thin film, organize the dough, take each piece of about 27 g of dough, roll it loose for a while, and press out the body part of the crab by hand, with a thick oval in the middle

4. Take another 25 g of dough, divide it into an average of 8 small dough, rub the circle and stick it on both sides of the crab's body, the crab has four legs on each side, take another 25 g of dough, divide it into 4 parts, rub the circle, cut it in the middle with a scraper, and you're done (picture)

Steps 5 to 8

5. After completing the mold, put it in the oven for a second fermentation, 30 minutes or so, put a plate of warm water at the bottom of the oven, so that the oven maintains some humidity, and now it's lovely

6. Brush the eggs, the brush is a little uneven.

7. 180 degrees, medium layer 15 minutes, coated with a layer of tin paper

8. What's going on?
